Quinoa and Lox Muffins

Get ready to impress your family and friends with this simple, yet fancy recipe.  This is another recipe inspired by fitfoodiefinds.  I did alter the recipe a bit and added my own little flair to it, but the idea was inspired by her.

I used some left over mixed grains, similar to what I used for my teriyaki salmon, but   straight up cooked quinoa will do the trick.  I also made only 1 muffin for myself to try out, but the following recipe will yield a dozen muffins. quinoaloxmuffin1

Note in the picture above my kale is in small leaf form…for your recipe chop the kale into bite sized pieces, it will come out better 🙂

Quinoa and Lox Muffins

Perfect brunch to impress
  • 3 cups quinoa, cooked
  • 1 dozen eggs, you'll need 1 egg per muffin
  • 1 cup kale, chopped (about 1-2 large leaves)
  • 8-10oz lox (smoked salmon)
  1. Preheat oven to 350F
  2. Line a muffin tin with olive oil or canola oil
  3. Cook quinoa according to instructions (always a 1:2 ratio; quinoa to water)
  4. Once quinoa is cooked, fill each muffin space about ¼ way with quinoa
  5. On top of the quinoa sprinkle some chopped kale
  6. Followed by about .5-1oz of lox, a small piece just to cover the kale
  7. Crack an egg over the lox, and top with a thin layer of quinoa, just enough to fill the muffin space (NOTE: you want about ¼ cup of quinoa per egg)
  8. With a fork, work the egg through the other ingredients, to insure the muffin holding its shape
  9. Bake for 15-20 minutes
