Guilt-Free Potato Nachos

For an easy, comforting, and healthy meal try these awesome guilt-free potato nachos!  I made this for movie night when I didn’t feel like cooking a real dinner, or ordering in crap.  I’m also thinking that this will be a great snack/dish to add to my game-day menu.

It’s tough to get some men to eat healthy food and enjoy it as if it was deep fried and swimming in cheese and grease…but this may be the ticket!!!  Blake gave it a 5 star rating, loved it! potatonachos1 potatonachos2

Guilt-Free Potato Nachos

Serves: 6
  • 6 medium baking potatoes
  • 2 tbsp. olive oil
  • generous grind salt and pepper
  • chili powder
  • 1 cup medium shrimp, cooked
  • 1 can (15 oz) red beans, drained
  • 1+ heaping cup sharp cheddar, shredded
  • 1 cup salsa
  • light sour cream
  • cilantro
  1. Preheat oven to 350F
  2. Slice potatoes and cut into halves. In a large mixing bowl, toss potatoes with olive oil, salt, pepper, and chili powder until evenly covered
  3. Pour potatoes into a 9x11 baking dish and bake potatoes for about 35-40 minutes, or until potatoes are fully cooked. Fork should be able to penetrate potato easily
  4. Toss shrimp and red beans with the cooked potatoes
  5. Sprinkle cheese generously over the top of the potatoes and top with salsa
  6. Stick back into the oven and bake for another 5-10 minutes, or until cheese is completely melted
  7. Serve with a small dollop of light sour cream dressed with a few cilantro leaves

Other ways to dress up this recipe may be to…

  • use sweet potatoes over white
  • add ground turkey meat or tofu
  • sneak in more veggies; bell peppers, kale, spinach, jalapeños, cauliflower, etc.
  • mix in meatless chili

To reduce fat and cholesterol try…

  • reduced fat cheese and less of it
  • ground turkey/chicken or more beans instead of shrimp/seafood
