Chickpea Snack

It’s SNACK TIME!  This recipe was inspired by The Good Bean.  I tried out The Good Bean snack when I came across them in the grocery store this summer and they were a perfect guilt-free snack.

This healthy, delicious, flavorful, and crunchy snack is surprisingly easy to make and filled with fiber, protein, and potassium. chickpea1

I tried half salt & pepper and half cinnamon & sugar.  The salt & pepper came out great, the cinnamon & sugar came out…alright.  I don’t think I added enough cinnamon, or sugar because it didn’t have a sweet enough flavor.

  • 1 can (15oz) chickpeas (garbanzo beans), drained
  • 2 tbsp. olive oil
  • generous grind sea salt
  • generous grind black pepper
  1. Preheat oven 400F
  2. In a large mixing bowl, lightly toss chickpeas and oil and desired seasonings. (I split the can using half salt and pepper and half with sugar and cinnamon)
  3. Bake for ~40 minutes. Watch carefully to make sure they don't burn

When the chickpeas have cooled, store them in an air tight container and they should last 3-4 days.
